Suppliers are an integral part in producing quality meat. At the
Aberfoyle Butcher we use small artisan producers who are passionate
about what they raise for us, and are choosey about the breeds and
bloodlines they work with, as this is done in conjunction with their
environment. Quality and ethics are inextricably linked to great
meat and are important at every stage in the process. The farmer
has a huge responsibility to provide good husbandry, environment,
and food, amongst other considerations, in providing “happy”
meat for us…..factors known collectively as provenance.
This approach will give
us meat that has character truly reflective of its breed, lifestyle
and environment. Thus our suppliers do not just produce beef or
lamb….they produce a specific breed with provenance and character,
reflecting the animal’s life, which we must respect and honour.
